After taking a few cake decorating classes, our interest has soared to no end. While living and working in the same city has been a sweet treat in itself, a move across the state has spawned the desire to keep in touch by taking our love of baking and everything kitchen to the next level. Baked Sunday Mornings: Carrot Coconut Scones

Hello, my name is Tracy, and I swore I wouldn't like these scones.  And since we're being honest, I actually LOVED these scones.  You see, I'm not a huge coconut fan.  I just can't get on that bandwagon.  But I was surprisingly proved wrong with these.  I opted not to make the glaze, and they were still sweet enough for me.  Delish!

I am also a coconut hater, so I didn't make them. I made a previous recipe though! Yours look really pretty and I'm glad you enjoyed them.

Yes, I was sure I would not like these...haven't met scones that are worth eating...but, I was surprised...totally good and I'll make them again.

I completely agree with you about the glaze; I ate mine without it, and loved them all the same! I'm jealous of everybody's perfect triangles! Mine were blobs. Tasty blobs, but still blobs!

I'm glad you ended up liking them. I also considered not glazing mine. I think they might be nice with some coarse sugar sprinkled on top as well. They look great and your plate is pretty cute too :)
