Chicken Taquitos

Here's the thing, I could eat tex-mex every day for every meal and never get tired of it.  I think proof of this is that my husband and I go to the same restaurant almost every Friday for their hatch chicken enchiladas.  These taquitos really intrigued me, they're definitely not the same thing you'd get out of a frozen box from your grocer's freezers.  The inside is creamy and spicy with just enough spice. 

Chicken Taquitos

3 oz. cream cheese, softened
1/4 c. salsa
1 tbsp. fresh squeezed lime juice
1 tsp. chili powder
1/2 tsp. cumin
1/2 tsp. onion powder
1/2 tsp. garlic powder
3 tbsp. chopped cilantro
2 green onions, chopped
1 c. shredded Mexican cheese
2 c. shredded chicken
10 6 in. flour tortillas


Preheat the oven to 425 degrees.  Mix all ingredients except the tortillas in a large bowl.  Heat the tortillas slightly in the microwave so that they are easy to roll.  Fill each tortilla with about 3 tbl of filling and roll tightly.  Place seam-side down on a baking sheet, spray with cooking spray and sprinkle with salt.  Bake for 15-20 minutes until golden brown.
