I've never made tartlettes before, but I'm not sure what I was waiting on. These Almond Joy Tarts were cute and delicious. Underneath all that chocolate is a creamy white chocolate filling with coconut swirling through. Oh and a shot of rum. I like to think that's where the Joy part of the title comes from.
And let's not forget this crust. The recipe incorporates ground almonds into the pastry, and I loved the idea of this. Its a good twist on a plain ole pie shell. Here's the close up:
